What are pig wings?
Sorry to disappoint, but pigs will not be flying anytime soon.
Pig wings are pork shanks derived from the hog’s rear leg.
The hog shanks have been french trimmed, and as you cook the pig wings, you will observe that the bone begins to show and the flesh shifts to one side of the bone. This enables the meat to absorb more heat while yet staying juicy and tender.
Where can I find pig wings?
Unlike chicken wings, you won’t be able to locate them in every grocery shop.
You may have to do some exploring to find them.
Porter Road, where we received our pork wings, also provides a fantastic selection of delectable meats that can be sent straight to your house.
If your local grocery shop does not carry them, you may try visit your local butcher, who may have them in stock or can place a special order for you.
How to make Buffalo Garlic Pig Wings
1. Fire up your grill for direct high heat searing
Portable barbecue that is also ideal for swiftly preparing meals for the house. Today I’m cooking using our Nomad Grill, a very adaptable smoker.
This grill has two heavy-duty diecast cook boxes and up to 425 square inches of cooking area.
Because we are cooking using direct heat, a pellet grill or even a gas grill are excellent choices for this dish.
I used Fogo Charcoal, which is by far my favorite brand on the market. It has a very wonderful taste, burns really hot, and lasts a long time.
I used a Charcoal Chimney to ignite our charcoal, which takes around 15 minutes to get the charcoal ready for a quick and rapid cook.
You want to heat your grill to around 400F.
2. Season pork wings
Begin with using avocado oil as a binder to help the seasoning stick to the meat, then season liberally with a salt, pepper, and garlic mix (SPG).
These would also benefit from our honey garlic rub.
For this recipe, you can simply substitute your favorite pork rub.
Something to bear in mind while grilling over direct heat (about 400F+) is that sugars may readily burn.
I would suggest either avoiding a sugary rub or cooking at a lower heat for a little longer cook time.
After seasoning the pig wings, I used my MEATER Plus to check the internal temperature by putting it into the deepest section of the flesh near the bone.
As you start cooking, their technology will give you an estimate of when your meat will be done, which is always helpful.
3. Make the buffalo garlic sauce
This process is quite simple. Franks Buffalo Sauce, freshly minced garlic, butter, and honey are the only ingredients required.
In a skillet, combine all of the ingredients and simmer for 3-4 minutes over medium-low heat until they mix together as one sauce.
Set aside the sauce after it’s through cooking, since you’ll be basting the pig wings with it at the end.
Another wonderful flavor option is to use your favorite barbecue sauce to sauce them up at the end, same to how you would with the buffalo garlic sauce.
4. Grill over direct heat
When your grill reaches 400°F, set the pig wings on the grates for approximately 15 minutes, flipping them every 2-3 minutes to cook them evenly while also developing some excellent grilled flavor.
Begin basting each pig wing after the internal temperature reaches roughly 135F, then turn them over and baste the opposite side.
Flip them every 2 minutes to enable the sauce to caramelize and add flavor to the meat.
Remove the pig wings from the grill and let them rest for 2-3 minutes after reaching an internal temperature of 145F in the deepest portion of the flesh.
Serving your pig wings
When your pig wings are done, top them with green onions or blue cheese crumbles to add more flavor.
Another delicious alternative is to dip them in blue cheese or ranch sauce, depending on your taste.
