How to make the best brisket grilled cheese
I cooked the grilled cheese on my Pit Boss Sierra griddle, but you can easily make it on the stovetop with any nonstick pan.
Because we are using leftover brisket, it is essential to cook it separately before adding it to the sandwich. If you put it in the sandwich first and the brisket is cold, it will take a long time for everything to warm up and the bread will likely burn.
Place your beef on the griddle and roughly cut it into tiny bite-size pieces. They will rapidly warm up and the edges will get crispy, which is delicious.
Meanwhile, butter one side of some sourdough bread and place it on a baking sheet to toast. I prefer to butter the second side of the bread while the first side toasts.
After a few minutes, your brisket should be well warmed. Pile the shredded cheese on top of the brisket and stir it around a bit so the cheese melts and becomes lovely and gooey.
Flip one piece of bread so the other side toasts, then top with your delicious brisket and a bit extra cheese. Place the top piece of bread on top of the grilled cheese and turn it over to ensure that both outer pieces of bread are toasted and everything is melted together into one sandwich.
If your griddle has a lid, you may shut it for a minute to let the cheese to finish melting, or you can pour some water over the sandwich and set a metal bowl over it to allow the steam to melt the cheese.
