These pretzel nibbles are really simple to prepare and need just a few ingredients. Plus, serving them with homemade beer cheese is a marriage made in carb heaven.

How to make the pretzel bites

Remove your pizza dough from the refrigerator and allow it to come to room temperature before beginning to work with it.

Sprinkle some flour on the surface you’ll be rolling the dough on. This will enable the dough not to stick and will make rolling it simpler.

The first thing I do is press the dough down with my hands, pushing around the corners to increase the surface area. Push any air pockets that develop to the bottom as well.

Flatten the dough with a rolling pin until it is approximately 7-8 inches in diameter. It does not have to be a complete circle; it is more likely to be an oval form, which is OK.

Next, divide your dough into four equal pieces. Then wrap those pieces out into four long strands approximately 12 inches long.

Now, using a knife or kitchen shears, cut 1-inch pieces until all of them are cut. This is your pretzel bite!

Once the water has come to a boil, place 3 quarts of it in a kettle and add a cup of baking soda. Add the baking soda carefully and with caution, since adding too much at once can cause the water to froth and boil over.

Drop 8-10 pieces of dough at a time into the hot water and cook for 45 seconds before removing. Do not be frightened if your dough seems slimy; this is normal!

This step should not be skipped. It makes the dough’s final texture more like a pretzel than a pizza crust and is well worth the additional work.

Once all of the pieces have been removed, blot them dry using paper towels. Then set them on a baking sheet that has been lined with parchment paper.

Then, using your egg wash, brush it onto each pretzel piece and sprinkle it with kosher salt. Repeat with the opposite side of the dough pieces.

Preheat your smoker at 350 degrees Fahrenheit and lay your tray of pretzel pieces in it for 20-30 minutes, or until fully cooked.

They will begin to become golden, with the bottom side becoming darker. You may leave them alone or turn them halfway through if they get too dark.

Making the beer cheese

To make the beer cheese, heat a 10-inch pan over medium heat and add the butter, milk, and flour, stirring to combine. This will assist to thicken the cheese and make it more creamy.

You may also start the pretzel bits while your skillet is on the grill. Add the cheddar and mozzarella cheeses to the skillet. Then add your beer and thoroughly mix it up.

I used Miller Lite, but any light lager or Pilsner would do. Experiment with other varieties of beer as well.

Allow the cheese and beer to mingle and get melted together. Just keep a watch on the beer cheese to make sure it doesn’t go before the pretzel bites. As long as the cheese does not burn, you may leave it in the smoker until everything is done to keep it nice and warm.
