1. Prep the chicken

Light your charcoal using a charcoal chimney and distribute it across your grill when it’s hot.

Season your chicken thighs with your favorite barbecue rub (try our homemade poultry rub recipe) or plain salt and pepper. I used Kosmos Dirty Bird, a long-time favorite of mine.

Because boneless chicken thighs can be put out flat, they cook quickly. Simply grill them directly over the flame, flipping them a few times until cooked through. They’re done when the internal temperature of the thighs hits 165°F.

If you don’t have time to grill chicken, rotisserie chicken is a wonderful substitution, but there’s something about the grilled smokey taste from charcoal that goes so well with the other components in this dish. I guarantee you that the additional step will be worthwhile.

Allow the thighs to cool until you can handle them safely, then shred them into very tiny cubes or bits small enough to fit on a tortilla chip when scooping.

2. Prep the garnishes

Cook a couple pieces of bacon until crispy on the grill or in a pan. Crumble once cool.

Cut some green onions into tiny dice and slice up some jalapeo, depending on how fiery you want it. I used pickled jalapeo since I prefer the acidity, but fresh will give you a little different texture and a bit more heat.

3. Assemble

Combine the cream cheese, buffalo sauce, ranch dressing, shredded cheese, and chopped chicken in a mixing bowl. Combine everything completely, then transfer to a skillet and level out evenly.

4. The Cook

Cover the pan with a lid and place it directly on the grill for 10-15 minutes.

When the cheese has melted and begins to bubble, you’re ready to go. Remove the skillet from the grill using your heatproof gloves.

5. Garnish

Serve with the bacon, green onions, and jalapeo on top of the melted cheese.
